Fantastic Recipes and Where to Find Them: Occamy Bubble Tea with Magical Food Department

In our interview with extraordinary kitchen witch, Imana Grashuis, the creator of  Magical Food Department, we hinted that she was bringing some of her culinary magic to our vegan table….and here it is!

In the spirit of this Febrewary’s Vegan Cuisine Month, we’re proud to present a recipe that Magical Food Department conjured up exclusively for The Protego Foundation.

We hope you’re ready to adventure into the world of Magizoology and revisit creature-loving Newt Scamander, because Magical Food Department’s fantastic recipe (and how to make it) is Occamy Bubble Tea! 
Of the Fantastic Beasts and Where to Find Them-inspired recipe, Imana says, “The tea idea comes from the cricket, and the teapot [scene] where [Newt and his friends] caught the escaped Occamy from Newt's case,” in the first film. 

The tapioca pearls represent the “protected Occamy eggs,” while brewing the butterfly pea flower petals creates a vibrant blue tea. But that’s not all. “When you add a drop of lemon juice, the brewed tea becomes purple. Just like the colours of the Occamy's skin!”  

So grab your wand, and let’s dive into famed Magizoologist Newt Scamander’s case to brew some of this Occamy Bubble Tea!

Occamy Bubble Tea 

Dreamed up and brewed by Imana Grashuis of Magical Food Department

This is a magical, ice-cold bubble tea inspired by the amazing Occamy. It’s a cool, butterfly flower tea with pineapple juice, blueberry syrup, and vanilla, bursting with tapioca pearls and garnished with edible flowers.

Yield: 2 witches/wizards

Ingredients:
  • 1 cup of tapioca pearls
  • 6 cups of water
  • 1 tsp vanilla extract
  • 2 tbsp butterfly pea flower petals
  • 1 tsp blue spirulina
  • 2 1/2 cups fresh pineapple juice
  • Juice of 1 lemon + zest
  • 1 cup of frozen blueberries
  • 2 tbsp maple syrup

​Magical Method:

1. Grab a medium-sized pan. Add your frozen blueberries, 2 tbsp of maple syrup, juice of half a lemon, vanilla extract, and lemon zest. Mix all the ingredients with a wooden spoon. The blueberries will turn a beautiful purple colour after a few minutes on medium heat. 

2. Cook the blueberry syrup for 6-8 minutes. Then grab a sieve and get all the bits out of the mixture, so you are left with a wonderful smooth syrup. Set aside.

3. Fill up a large pan with 6 cups of water. Wait for the water to boil, and add your magical tapioca pearls. When they start to float, remove the pan from the heat and let them steep for 2-3 minutes. Meanwhile, brew 2 cups of tea with the butterfly flower petals, 1 tbsp per tea glass. Brew the tea for only 3 minutes. Remove petals after brewing.

4. After steeping the tea, drain your tapioca pearls and cool them with cold water.

5. Add your pearls to a small bowl, add half of the blueberry syrup and blue spirulina, and mix until combined.

6. Let your tea cool completely before you assemble your magical beverage.

7. Grab your favorite goblet. First, add your pearls, then add a few ice cubes, the syrup to taste, pineapple juice, and the tea, and then top with a beautiful edible flower.
