Harry Potter's Favorite Treacle Tart Recipe

For all of you witches, wizards, and magical people out there who enjoy showing off your cooking charm skills, here is a recipe we think you might like.

It’s easy, it’s vegan, AND the one and only Harry Potter was kind enough to share it with us himself! 

Can you guess what he baked? It’s his favorite...

Treacle tart, of course! 

We’ll let Harry take it from here!

Some of you may know that treacle tart is my favourite dessert. 
I can’t count the number of times I’ve had it! This is going to make me sound like Ron (love you mate!) but I’ve never had a treacle tart I didn’t like. 

Did you know George actually bought me 30 jars of Honeydukes treacle for my thirtieth birthday? (Not that I’m complaining.) 

To this day, I can’t dig into a treacle tart without thinking about all those incredible feasts in the Great Hall at Hogwarts with Ron and Hermione alongside me. 

I’d love to be able to go back to Hogwarts to enjoy it one more time - hopefully without, you know, Voldemort trying to kill me and all of my friends. (Sorry, I must not tell lies!)  

For once, I thought I’d try my hand at baking one myself. 

I’m no Molly Weasley, and I have never been particularly good at Potions either, so I went for a quick and easy recipe with only a few ingredients. 

I bought a ready-made shortcrust pastry so that I only had to make the filling. I’ll leave the fancy stuff to Mrs. Weasley.

Better yet, this version is completely vegan! I’d hate for anyone to miss out on this perfect dessert. I know Hermione would never forgive me.

Here’s the recipe:

  • 340g (US 1 cup) of golden syrup
  • 160g (US 2 and ¼ cup) of bread crumbs, made from fresh or store-bought bread
  • Grated zest and juice of 1 lemon
  • ½ teaspoon vanilla extract 
  • One ready-made shortcrust pastry and a 22cm/9 inch tart pan or pie pan 
  • OR one frozen pie crust in an oven-ready pie pan

​Muggle-friendly instructions:

(Don't worry, Hermione looked this over first.)
1. For homemade bread crumbs (which work best in this recipe), toast 20 slices of fresh white bread until lightly brown in a Muggle toaster or toaster oven.
2. Crumble your bread into small pieces by hand or put them through a food processor to make the crumbs. They work best in the recipe if they’re a little fluffy and have some texture to them instead of being grinded into a powder. (Use the Severing Charm if you’re feeling adventurous). 
3. Prepare your premade pie crust according to instructions. If using just the ready-made crust, roll it out to line a 22cm/9-inch tart tin.
4. Preheat the oven to 180°C/ 350° F (but be careful when using Incendio!).
5. In a microwave safe bowl, heat the golden syrup for about 1 minute, until warm.
6. Stir together golden syrup with fresh bread crumbs, lemon juice, lemon zest, and vanilla extract until just combined.
7. Put your treacle filling into the pie crust and smooth it until even.
8. Bake for 10 minutes.
9. Lower oven temperature to 350° F and bake for another 20 to 25 minutes until your pie has a nice Golden Snitch colour. (Be careful not to overbake it. Remember what Mad-Eye used to say: “Constant Vigilance!”).
10. Let cool for a few minutes, add your favourite toppings if you wish, and dig in! 
11. Store the uneaten treacle tart in the refrigerator. Let it come to room temperature or reheat it in the microwave at 30 second intervals when you’re ready to eat another slice (or three!).

Serving suggestions:

  • You can keep leftover treacle tart in the fridge for up to a week (if it lasts that long!). 
  • Can be eaten warm or cold - treacle tart is ALWAYS delicious!
  • If you have a sweet tooth like Ron, you might want to add a few toppings. You could go for a scoop of dairy-free vanilla ice cream,custard, or whipped cream, and almond flakes, pecans, or walnuts. (This brings me back to my summer in Diagon Alley when I was 13, enjoying free sundaes from Florean Fortescue’s every afternoon.)
  • Or, you could open one of your thirty jars of treacle and pour that on top. (Oh… that might just be me…) ​

  • For those who are based in the UK, the brand “Jus-Rol” does a shortcrust pastry sheet suitable for vegans, as well as a shortcrust pastry sheet suitable for gluten-free vegans. They are available at your local supermarket. There, you can also find a vegan whipped cream by the brand “Food Heaven.”
  • In the US, Trader Joe’s has "Sweet Rose" coconut whipped cream and "Wholly Wholesome" vegan and gluten-free frozen pie crust (It’s premade and already in a tin!). You could also buy a powdered pie crust mix from "Bob’s Red Mill."
  • Non-gluten-free vegan options include "Marie Callender’s Pastry Pie Shells" or "Oronoque Orchard Flaky Homestyle Pie Crusts."
 
Now, Harry only baked one tart, but we know we can always enlarge or multiply it with a wave of our wand. Endless treacle tart? Yes, please!
