Cedric Diggory’s Triwizard Champion Granola Bars

Now that we’ve moved on to phase two of our Wizards For Environmental Protection (W.F.E.P.) campaign, The Black Lake Challenge, and our focus has shifted to reducing our plastic consumption, we could think of no better time to share this recipe! 

While granola bars don’t actually appear in the Harry Potter novels, this epic no-bake nut and seed-loaded bar is exactly the kind of snack that Cedric Diggory would eat to fuel up before each of his trials as the Hogwarts champion in the Triwizard Tournament. He’d certainly need all the energy he could get when plunging into the Black Lake to “rescue” his girlfriend from the Merpeople and to square off against angry Grindylows. 

As we’re focused on going plastic-free in this phase, everything in this gluten-free and vegan recipe can be made from ingredients bought in bulk bins or glass jars! 

The large batch size of this recipe also means you won’t need to rely on buying boxes of individually plastic-wrapped, store-bought granola bars! In other words, they keep unnecessary plastic out of the Black Lake and oceans, rivers, and streams in the non-magical world!

These bars are a must-have snack for any budding Triwizard Champion and environmentally-conscious witch, wizard, or magical person! 

They’re wickedly yummy and wholesome with a hearty, chewy texture and a TON of flavor. Even better, you don’t need any special kitchen equipment or fancy wand work to make them.  Since they require NO BAKING, even Hagrid couldn’t mess these up! 

You can change up the mix-ins to suit your every whim and still have plenty of time to train for Triwizard Tasks, advocate for animals, and protect our planet from pollution! (Eternal Glory and Moral Fiber may result.) That’s enough from us! We’ll let Cedric take it away from here. 

Hey! I’m so glad you could make it! Did you get a kick out of tickling the pear? I’m still not over the fact that an enchanted painting of a fruit bowl is what guards the Hogwarts kitchens. I wouldn’t be surprised if Professor Dumbledore put it there himself. He’s definitely got a sense of humour!

Speaking of which, I hope you brought your good humour, because we’re about to get cooking. Well, sort of! We’re not actually firing up any ovens today. Justin Finch-Fletchley says this is what Muggles call a “no bake” recipe. But wait, let me backtrack a bit! 

When Harry Potter and I were chosen to be the Hogwarts champions after our names came blazing out of the Goblet of Fire, everything changed! 

The Triwizard Tournament has more than lived up to its name. We’ve faced off against dragons, swam into the depths of the Black Lake, and now, as we creep closer to June, the mysterious final task is looming over us...

So many kind students have been complimenting my spellwork and bravery, but what you don’t see is that I also have my friends and all of Hufflepuff House as a great support team. I especially have my Quidditch mates and housemates, Justin and Hannah Abbott, to thank! 

They put their heads together and came up with the brilliant idea to make up these wholesome and hearty granola bars that energize me and keep me going strong in my training and during the Triwizard tasks.  

Every other week, we all come together here in the kitchens to make up big batches of these bars. I’ve found that whipping these up myself is a great way to calm my nerves, plus it gives the elves a break!

For this recipe, my Quidditch mates, myself, and some of the younger Hufflepuffs all went to Hogsmeade to buy the ingredients. I’m pretty sure that any old Muggle supermarket has these ingredients too, for any time you aren’t able to travel up to Hogsmeade.

In case you need any convincing, I’ve shared some of them with Harry, Fleur, and Krum too, and all of them couldn’t get enough of these bars. Krum even cracked a smile!

So, let’s get started, shall we?

Cedric Diggory’s Triwizard Champion Granola Bars 
Makes 12 bars 


Equipment and Tools
  • 9 x 9” square pan made of metal, glass, or ceramic (it doesn’t matter!)
  • Food-grade parchment paper (not the parchment for your Potions essays!) 
  • Wax paper
  • Non-stick pan or pot 
  • Heat-safe rubber or silicone spatula 
  • A working stove top and freezer 


Dry Ingredients and Mix-Ins 
  • 1 and ½ cups of old fashioned thick cut oats (NOT quick cook or steel-cut)
  • 1 and ¼ cups of rice crisp cereal
  • ¼ cup of shelled hemp seeds (or chia seeds)
  • ¼ cup flaxseed meal (or sunflower seeds)
  • ⅓ cup unsalted raw cashews, chopped or broken into tiny pieces
  • ⅓ cup unsalted raw walnuts, chopped or broken into bits
  • Heaping  ⅓ cup of unsweetened shredded coconut 
  • ½ teaspoon ground cinnamon (optional)
  • Pinch of sea salt (if using “unsalted” seed or nut butter)
Stovetop Ingredients  
  • ½ cup and 3 tablespoons brown rice syrup*
  • ¼ cup creamy sunflower seed butter**
  • 1 and a ½ teaspoons vanilla extract 


Other Mix in Suggestions
  • Mini chocolate chips
  • Dried cranberries, cherries, blueberries, or raisins
  • Sesame seeds
  • Pumpkin seeds
  • Chopped pecans
  • Slivered or whole almonds
  • Cacao nibs
  • Salted and shelled pistachios ​

Instructions for the Granola Bars 
​
  1. Line a 9 x 9 square pan with parchment paper and set aside.
  2. In a large metal bowl, stir all the dry ingredients together, then set aside. 
  3. Spritz a glass liquid measuring cup and a tablespoon with cooking spray and measure out the brown rice syrup - the syrup is very sticky, so this step is essential. 
  4. Next, using a dry measuring cup, spoon out your seed or nut butter, also spritzing it with cooking oil to prevent sticking.
  5. Once measured, add the seed or nut butter and brown rice syrup into the nonstick pot.
  6. Spritz a rubber spatula with cooking spray and give the two ingredients a quick stir.
  7. Put the pot on your stovetop and set the heat on the burner to medium-high. Once it starts to get bubbly, stir it. It should begin to melt together and have a smooth texture. 
  8. Remove it from the heat and shut the burner off, and stir in the vanilla.
  9. Next, add the melted mixture to your bowl of dry ingredients. Using your rubber spatula, thoroughly mix. (This part can get a little messy. You may need to use your hands to really get in there!)
  10.  Once it’s all combined, drop the mixture into the parchment paper-lined pan. 
  11.  Using a sheet of the wax paper, pack it down as evenly as possible (this helps the granola bars stay together)! 
  12.  With a piece of wax paper loosely on top of the granola mix, place the pan in your freezer for 10 to 15 minutes.
  13.  Once it’s firm, pull the edges of the parchment paper up to pop the granola bar mix easily out of the pan, and place it, parchment paper and all, onto a cutting board. 
  14.  Using a heavy knife, cut the bar mix in half horizontally. Then, take each of those two halves and cut them into 12 bars!
  15.  Eat and enjoy!

Storage: When you’re not eating the bars, put them in an airtight container lined with parchment paper in your fridge. Make sure the bars aren’t stacked atop one another, or they’ll smoosh together. They keep for about 2 weeks (if they even last that long).


Recipe Notes: 
*Brown rice syrup cannot be subbed in this recipe! It holds the bars together. We love Lundberg Sweet Dreams Organic Brown Rice Syrup, which is sold in the US in glass jars! 

**Unsweetened sunflower seed butter has a bitter taste, so be sure to buy the sweetened kind! You can also use creamy almond butter, cashew butter, or peanut butter.

***If adding mini chocolate chips, sprinkle them on top of the granola bars AFTER you press the mixture down in the pan. If you just stir them in with the mixture, they’ll melt! You want to sprinkle them on top once it’s mostly cooled and pop it straight in the freezer.
